Oakland, Calif. – October 15, 2026: Oakland San Francisco Bay Airport (OAK) today celebrated the grand opening of two highly anticipated dining destinations in Terminal 2: Trader Vic’s and Plum Market. The new concessions represent a major enhancement to the airport’s food and beverage program, offering travelers a uniquely Oakland experience alongside fresh, chef-driven dining options. Both new locations are operated by travel retailer Hudson.
The grand opening event featured remarks from Oakland Mayor Barbara Lee, Congresswoman Lateefah Simon, California Assemblymember Mia Bonta, Port of Oakland Board President Stephanie Dominguez Walton, Trader Vic’s Hospitality Group CEO Rhett Rosen, Plum Market CEO Matt Jonna, and Avolta Vice President of Business Development Theodore Graves. Guests enjoyed a live ukelele performance, menu samplings from both concepts, and a special mock-Mai Tai workshop inspired by Trader Vic’s world-famous Original Mai Tai®.
“These new concepts showcase what makes Oakland and the Bay Area special,” said Port of Oakland Director of Aviation Craig Simon. “Trader Vic’s is one of Oakland’s most recognizable hospitality brands, while Plum Market brings an outstanding collection of fresh, locally sourced, and chef-crafted offerings. Together, they create an elevated dining experience that reflects our commitment to providing travelers with local flavor and exceptional customer experience.”
“Opening at OAK is incredibly meaningful for us,” said Rhett Rosen, CEO of Trader Vic’s Hospitality Group. “Trader Vic’s was born in the Bay Area, and this new location gives us the chance to welcome travelers with a taste of that original spirit before they take off. It brings together everything people love about Trader Vic’s — great cocktails, flavorful food, warm hospitality and a little sense of escape — in a place that connects Oakland to the world.”
“We are thrilled to bring Plum Market to Oakland San Francisco Bay Airport and serve the millions of travelers passing through the Bay Area,” said Matt Jonna, CEO and Co-Founder of Plum Market. “Our goal is to redefine airport dining by offering clean, wholesome, chef-driven choices that travelers can feel good about enjoying, whether they have a quick layover or time to relax before boarding.”
“We’re proud to partner with Trader Vic’s, Plum Market, and OAK to bring a genuinely distinct dining option to Terminal 2,” said Steve Johnson, President & CEO, North America, Avolta. “As we grow our portfolio of hybrid concepts, Plum Market and Trader Vic’s at OAK prove that airport food and beverage can serve travelers in the moment — whether they have just a few minutes to spare and want a chef-crafted meal on the go or they have time to linger and take in the full experience.”
Located in Terminal 2 near Gate 25, Trader Vic’s marks a homecoming for the legendary hospitality brand founded in Oakland by Victor “Trader Vic” Begeron. The full-service restaurant features seating for more than 100 guests, a signature cocktail program, island-inspired cuisine, and exclusive retail merchandise created specifically for OAK travelers. The bar menu features an OAK-exclusive cocktail, “The Rooted Road,” inspired by another Oakland-born culinary creation, Rocky Road ice cream.
Adjacent to Trader Vic’s, Plum Market offers travelers a broad selection of made-from-scratch meals, fresh salads, artisan sandwiches, gourmet soups, grab-and-go options, and locally sourced products. The market also features Northern California brands, healthy snacks and beverages, and wellness essentials designed to meet the needs of today’s travelers.
The opening is part of OAK’s ongoing efforts to enhance customer experience through investments in terminal amenities, local partnerships, and expanded dining and retail offerings.
